Step 1: Rinse Sardines

Step 2: Scale Removal
Using the back of your knife or a scaling tool, gently scrape off the scales from tail to head. Do this under running water to easily wash away loose scales.
Step 3: Remove the Head
Place the sardine on a cutting board and use a sharp knife to remove the head just behind the gills.
